We constantly here that breakfast is the hardest meal for people on paleo. I for one find it the easiet meal to not cheat and I can constantly vary what I am eating. So myself and a few other paleo gurus (Brown Owl, Tbear, The Duronios…..) have compiled a short list for some simple breakfasts:

what are these “paleo pancakes” you speak of… i want some. a handout i have specifically says “paleo” pancakes dont exist.

Donkey-they’re soooo easy and delicious with agave or honey;)… Coconut flour, like 2 tblsp, 2-3 eggs, little baking soda…couple other things I think, careful cuz they can burn:).

Here’s the input from someone who’s ‘expected’ to make pancakes on weekend mornings. We’ve tried lots of variations. No sugar needed if you like bananas. Here’s a couple of options:

Fully Paleo: mash a banana with one or two eggs; mix in almond butter (with some almond flour if you like); you can add some almond milk to get to the right consistency. If you want to avoid butter to cook them, use some olive oil. They don’t rise, but still have nice consistency.

Still Paleo: add in some arrowroot with almond flour and use some baking powder; if you don’t like banana, use apple sauce for the sweetness, and leave out the almond milk.

For a more traditional-like pancakes that’s still gluten-free and slightly non-paleo, I mix a ratio of 2/3 almond flour, 1/3 flaxseed meal and brown rice flour; for one cup, add in 1 tbsp. arrowroot and 1.5 tsp baking powder. This is mixed into 2 eggs beaten and a banana – if you want sweetness, instead of banana, add in a tsp of coconut sugar; add almond milk to get to the right consistency.

You can experiment with coconut flour, non-gluten baking flour (not paleo), and of course, adding in fruit like blueberries or strawberries.
